The Mugello chestnut, a noble fruit that was called "bread of the poor", has qualities that make it a valuable product for the most refined palates. It evokes and expresses fullness and authenticity for its elegant shape, its warm color, its unmistakable and genuine taste, but also because it can speak of enchanted woods, ancient knowledge and lost flavours. Today it arrives on the market, thanks to the skills acquired over the course of centuries.
We produce the chestnut flour in our farm. The drying process of fresh chestnuts takes place at low temperatures thus preserving the organoleptic and nutritional properties of the fruit. The chestnuts, once dried are beaten to separate the fruit from the shell. They are then selected one by one through a careful manual selection. This is the only method that can guarantee a final product of high quality.
The selected dry chestnuts are ground in a traditional stone mill, still fed by the water of the Mugello mountain streams. We have a big care also for the milling phase, looking for a slow rotation speed of the mill, which avoids heating the grains of flour, preserving the fragrance.
The chestnut flour is a sweet, round and velvety flour, excellent for sweet and confectionery preparations. For centuries used in the kitchen throughout the year, often also for the preparation of savory dishes (polenta, gnocchi, pasta).
