Farina di marroni (Chestnuts flour)

The selected dry chestnuts are ground in a traditional stone mill, still fed by the water of the Mugello mountain streams. We have a big care also for the milling phase, looking for a slow rotation speed of the mill, which avoids heating the grains of flour, preserving the fragrance.

The chestnut flour is a sweet, round and velvety flour, excellent for sweet and confectionery preparations. For centuries used in the kitchen throughout the year, often also for the preparation of savory dishes (polenta, gnocchi, pasta).
