Very mature and healthy grapes are hand-picked and
selected. They are then pressed with a soft press
method and allowed to ferment at a temperature that
does not exceed 20 °C. Subsequently, the wine is left
to age on fine lees for 3 months.
The wine is bottled and sold the following spring
