Culatta Emilia (Culatello with rind)
The processing for this fine cured meat does not entail bagging: the lean part is, in fact, covered with a layer of lard, while the rind of the ham itself covers its fatty part.
A blend of salt and spices is spread on its surface before placing it in a net and moving it to the appropriate micro-climate of our cellars for a minimum of 12 months of aging.
Excellent choice in your plate of appetizers or on top of a slice of crispy bread. When sliced, it immediately releases all its irresistible fragrance. And when it finally reaches the palate it explodes in tasty, balanced nuances, reminiscent of ham and culatello.
