Training method: Short sylvoz.
Harvest: Manual into crates at the end of August, selected clusters only.
Maceration: In-press at 8 °C for about 12h.
Pressing: Soft with a yield <55%
Fermentation: Natural followed by malolactic fermentation of the wine.
Maturation: In diamond-shaped concrete tanks without no added sulphites.
