The Typical Emmedue Lucanian Salami
There are many regions contending with each other for the origins of this extraordinary pork product. As a matter of fact, people from Milan tell a tale according to which the Lombard Queen Teodolinda invented the “Lugane- ga” (as it was called in the area of Milan). Nevertheless, Cicero, Martial and Marcus Terentius Varro clarified the origins of the sausage, claiming that the Lucanica, in- introduced in Rome by female slaves from the Basilicata
region, was a kind of minced meat pushed through pork casings. It was called Lucanica because Roman soldiers had learnt how to manufacture it from people from the Basilicata region.

Thanks to a careful selection of raw materials, flavors and spices is carried out in order to combine the balance between an ancient and precious tradition and modern technology. The aromatic plants used as laurel (Laurus nobilis or Lauro) are grown on farm land. Wild fennel (Foeniculum vulgare) is harvested by expert hands in the areas bordering on the farm and only after having passed the rigorous quality controls is used in typical processes such as for example the seasoned sausage. Our production varies from the typical of the territory, such as Lucanica sausage, Soppressata, Capocollo, Pancetta and Prosciutto Crudo, to the classics of Italian “salumeria”, such as Naples, Spianata, Ventricina and Milan.
