Serving suggestions:
• as base for mayonnaise with flavour of parmigiano
• as base of vinaigrette (oil-vinegar or oil-lemon emulsions) for dressing salads or meats
• for cooking vacuum-packed steamed vegetables
• as an alternative to butter for some types of risotto
The preparation of the product takes place in the following method:
- Parmigiano Reggiano© (both rinds and inside) is prepared in cubes and then inserted with the extra virgin olive oil in a food bag and vacuum packed;
- the bag is placed in a steam oven for 8 hours;
- at the end of the 8 hours, the bag is immediately inserted into a blast chiller in order to stop the cooking process and protect the product from any pathogens.
