GOVERNO ALL'USO TOSCANO - TOSCANA IGT
REGION OF ORIGIN: Tuscany
WINEMAKING: Grapes are hand-picked in boxes. After crushing, grapes are fermented in stainless steel tanks by selected yeasts with 10-15 days of maceration. Fermentation’s temperature is contained within 28-30°C and the must is pumped over its skins twice a day to draw flavourings and colouring substances. Slow refermentation of the freshly produced wine with the addition of semi-dried grapes for about 30 days.
AGEING: Storage in stainless steel tanks until bottling.
ALCOHOL: 13% by Vol.
STORAGE: At cellar’s temperature (15-18°C/59-63°F)
SERVING TEMPERATURE: 18/20°C
FOOD PAIRINGS: Cheese, legume soups, boiled meats and vegetable pies. Also well paired with roast meats and wild game.
WINEMAKER’S NOTE: A supple and mellow Tuscan red with fresh red berry fruit and a full, spicy flavour. The ‘Governo’ method, a traditional Tuscan technique involving a slow refermentation of the freshly produced wine with the addition of semi-dried grapes, gives vivacity, concentration and roundness to the wine.
