Scamorzina di Latte Vaccino

Scamorzina is produced with cow's milk and has a fairly hard and thick crust, while the color varies according to the seasoning: it changes from a straw yellow color with aging. The paste is compact and elastic with medium seasoning, but then becomes hard in the following months.
