Age of plants: 40/50 years old.
Training method: Sylvoz, Rive di Farra with 75° slope angle.
Harvest: Manual into crates at the end of September, only the best clusters.
Pressing: Soft with a yield <55%
Maceration: At 8°C for about 12h.
Fermentation: Natural.
Aging: In steel tanks.
Sparkling process: In the spring using the Martinotti method for about 3 months before bottling.
