Harvest: Manual into crates the second week of September.
Maceration: In-press at 8 °C for about 12h.
Pressing: Soft with a yield <55%.
Fermentation: Natural followed by malolactic fermentation of the wine.
Maturation: In diamond-shaped concrete tanks.
