Training method: short Sylvoz, 3 kg grapes per plant.
Harvest: Manual into crates the second week of September, only the best clusters.
Grape pressing: Whole with fast decanting for 12 hrs.
Fermentation: In oak barrels, about 2 weeks at a controlled temperature of 20/22°C.
Aging: On fine lees for about 9 months.
