Emmedue Great Reserve

-Seasoned pork product. It is a coarse-grained big salami (about 3 kg) flavoured with wild fennel seeds and powdered fennel, pushed through pork casings and tied with a string.
-the Dorso dei tre alberi® is a particularly savoury pork product obtained thanks to the combination of loin of suino pesante (that is a typical Italian pig used to manufac- ture PDO and PGS pork products deriving from the mating of Landra- ce pigs with Large White sows; it is raised for about one year and weighs more than 150 kg) with pork lard.
-The Loin of Pork is a lean pork product characterized by a delicate flavour.
-The Emmedue Culatta derives from the finest part of the thigh of the suino pesante (described above). Its deliciousness is due to our long experience and proven dedication combined with our care during the manufacture and a long seasoning. This is why Emmedue Culatta is a high-quality product

PRODUCTS – Salumi Emmedue offers a wide range of traditional and typical cured meats, 100% made in Italy, gluten free (included in the book AiC 2018), without GMOs, lactose and milk proteins free. Thanks to a careful selection of raw materials, flavors and spices is carried out in order to combine the balance between an ancient and precious tradition and modern technology. The aromatic plants used as laurel (Laurus nobilis or Lauro) are grown on farm land. Wild fennel (Foeniculum vulgare) is harvested by expert hands in the areas bordering on the farm and only after having passed the rigorous quality controls is used in typical processes such as for example the seasoned sausage. Our production varies from the typical of the territory, such as Lucanica sausage, Soppressata, Capocollo, Pancetta and Prosciutto Crudo, to the classics of Italian “salumeria”, such as Naples, Spianata, Ventricina and Milan.
