We are a Gragnano pasta factory with more than 100 years of experience in pasta making with the PGI (IGP) certification (protected geographic origin) of Gragnano (Naples, Italy). For our production we only select 100% italian durum wheat and use the water from the near source of Faito Mountain. Once chosen ingredients, our pasta makers sift the durum wheat to control the purity of the product before starting production. Once the mixture is prepared it goes through a bronze die which gives the shape at the pasta and then the pasta is dried in static cells for at least 24 hours. The bronze die and the slow drying process give to the pasta the typical roughness that allows a perfect union with the sauce and condiment.
